Easter White Chocolate Chex Mix


Easter White Chocolate Chex Mix is a quick and easy Easter snack that the whole family will love. It comes together in under 30 minutes and with no baking required. It’s the perfect treat for your Easter get-together this year.

Ingredients
  • 6 cups Rice Chex cereal
  • 2 cups miniature marshmallows
  • 1 cup mini pretzel twists
  • 15 oz white chocolate candy coating
  • 3 Tbsp Easter sprinkles
  • 1/4 cup powdered sugar
  • 1 cup miniature candy-coated chocolate eggs
Instructions
  1. In large bowl, combine Rice Chex cereal, miniature marshmallows, and pretzels. 
  2. In small microwave-safe bowl, melt white chocolate candy coating in microwave for 1-2 minutes. Stir until smooth.
  3. Pour candy coating over Chex Mix and stir to coat completely.
  4. Spread Chex Mix out onto waxed paper. While still wet, sprinkle Easter sprinkles over the Chex Mix. Let dry completely, about 15 minutes.
  5. Break Chex Mix into bite-sized pieces and place in a large zip-top plastic baggie. Pour in powdered sugar and shake to coat. 
  6. Scoop Chex Mix out into a serving bowl. Discard remaining powdered sugar. 
  7. Stir in candy-coated chocolate eggs. 
Easter White Chocolate Chex Mix is a delicious treat that also makes a great Easter family activity. You can let your little chefs assist with the mixing and stirring as well as choosing the chocolate mix-ins.

Key to Success #1 – Make a Delicious Base
The base for this Easter Chex Mix is Rice Chex cereal, tiny twist pretzels, and miniature marshmallows. You can use Corn Chex cereal or a combination of both, if you prefer. I always try to go with just one Chex cereal variety to save a few bucks.

Have you seen those cute little Jet-Puffed Bunny Mallows that they have every year around Easter? Those would be so cute in this Easter White Chocolate Chex Mix!

I ordered some Bunny Mallows through the Walmart Grocery Pickup app a few weeks ago, but when I got my order back home I realized they’d given me Candy Corn Marshmallows instead! Not the same!

Key to Success #2 – Melt the White Chocolate
To fully cover this amount of Chex Mix, you’ll need 15 ounces of white chocolate candy coating. Most of the packages in the store are sold in 20 ounce packages with 12 blocks in each package. If this is the case for you, you’ll need 9 of the blocks of candy coating.

Just put the candy coating blocks in a microwave-safe bowl and microwave for about 2-3 minutes, stirring every 30 seconds. Then stir until the white chocolate is completely smooth.

Key to Success #3 – Add Sprinkles When Wet
After you’ve coated the Chex Mix with white chocolate coating, turn it out onto a large sheet of waxed paper and spread it out into an even layer.

Now comes the fun part – shake Easter sprinkles all over the top of the Chex Mix. Since the white chocolate coating is still wet, the sprinkles will stick.

I have found that smaller sprinkles stick better onto the wet Chex Mix. Sometimes the larger sprinkles tend to fall off onto the waxed paper and get lost.

Key to Success #4 – Coat with Powdered Sugar
After the Chex Mix has dried completely, break it into bite-sized pieces then put it into a large zip-top bag and pour in the powdered sugar. A quarter cup doesn’t seem like much, but believe me it’s plenty.

Shake the plastic bag around to coat the Chex Mix pieces evenly with the powdered sugar. You might need to split the Chex Mix into two batches if it will not fit easily into your zip-top bag. You can just use 1/8 cup of powdered sugar in each batch.

Pour the Chex Mix out into a large colander and shake over the sink to let the excess powdered sugar fall off.

Key to Success #5 – Add Chocolate Candy Eggs Last
Wait until after the powdered sugar step to add your Candy-coated Chocolate Eggs. This will help ensure that your pretty, brightly-colored candies really pop in this Easter White Chocolate Chex Mix.

You can use any types of chocolate candy eggs that you prefer. For me, the brighter colored, the better! We used Whoppers Robin Eggs, some Reese’s Eggs, and some Peanut M&Ms. This is a perfect opportunity to let your mini chefs use their creativity in the kitchen, too.
